Merci Chocolate Brownie Biscotti

There is something about working in the medical field during christmas time:

You get an incredibly high amount of chocolate from thankful patients- mostly Merci chocolate.

And even if you honestly appreciate every sweet gift you get, it could be that you are not that much into this kind of chocolate.

Like me.

So in early new year you start to think about what to do with all of it besides giving it to someone who likes it more.

I thought about baking with it. And this is what I got.

I got Merci Chocolate Brownie Biscotti.

And these I like very much. Because they are chewy and crispy.

Merci Chocolate Brownie Biscotti

adapted from the Chocolate Biscotti recipe out of Chewy Gooey Crispy Crunchy

You need:

  • 2 cups flour
  • 1/2 cup slightly sweet, strong cocoa powder
  • 2 tsp instant espresso
  • 1 heaped tsp baking powder
  • 1/2 tsp salt
  • 8 Tbsp melted butter
  • 3/4 cup brown sugar
  • 2 eggs
  • 1 sachet of vanilla sugar
  • about 1 cup of roughly chopped mixed merci chocolate

In a bowl mix flour, cocoa powder, instant espresso, baking powder and salt. Add butter, brown sugar, eggs and vanilla sugar and mingle well until you get a smooth dough.

Now fold in the chopped chocolate and finally spread the dough into a flat loaf you place on a baking tray lined with parchment paper.

Bake for 30 minutes at 150 degrees.

Then take the tray out of the oven and let the loaf rest for 15 minutes while leaving the oven on.

Now cut the loaf crosswise into slices and bake them for another 20 minutes until they are crispy on the outside and a little chewy inside.

    Excellent idea! I don’t get much supermarket chocolates (luckily!), but sometimes when I do I am so sorry because the person had good intention and I…. well I am spoiled and snobbish with all the excellent Swiss chocolatiers around…
    Now I know how to transform some present into a delicious cake ;-)

    I’ve never heard of merci chocolates so now I’m curious. You certainly did do a great job of recycling them into something that looks absolutely wonderful! A cakey, crispy biscotti sounds great!
